A delicious Detox & easy-to-digest, low in calories meal, with all the essential amino-acids that we need to create complete protein, therapeutic herbs & spices, dietary fibre, minerals, vitamins, healthy fats, that will help a lot with water retention!! Properties, Recipe & Tips.

Let’s start by having a look at the beneficial nutrients in our recipe.

 

  • Vitamins: C, A, K, E, B1 (Thiamine), B2 (Riboflavin), B3 (Niacin), B6 (Pyridoxine), B7 (Biotin), B9 (Folate), Lutein, Zeaxanthin.

 

  • Minerals: Iron, Magnesium, Phosphorus, Zinc, Manganese, Potassium, Selenium, Calcium, Cineole, Eugenol, Chloride & Sodium (they work together  to retain fluid balance & for the water to enter our cells), Copper, Iodine, Chromium.

 

  • Dietary Fibres: Both soluble and insoluble (to keep us full for long, to move waste through our bowels, and clear away mucus from meat & dairy consumption that prevents us from absorbing the essential nutrients.

*Yes, we feed from our bowels.

 

  • Amino-acids (Essential for our system to create protein. Not, again, protein is not meat!!): Histidine, Isoleucine, Leucine, Lysine, Methionine, Phenylalanine, Threonine, Tryptophan, Valine.

 

  • Healthy & essential fats: Monounsaturated Fatty Acids (Oleic Acid), Ω3, Ω6, Ω9 fatty acids (in olive oil).

 

  • Antioxidants & Phytochemicals:

In olive oil: Polyphenols, Oleocanthal (against cancer and neurodegenerative diseases), Hydroxytyrosol.

In the other ingredients: Quercetin, Sulfur Compounds, Allicin, Gingerol, Shogaol, Rosmarinic Acid, Carnosic Acid, D-Limonene, Flavonoids, Curcumin (especially for Arthritis!), Piperine (to absorb Curcumin), Capsaicin, Thymol, Carvacrol.

 

 

  • Beneficial enzymes (for the correct digestion, pectin break down, nutrient absorption, antioxidant properties): Lipase & Polyphenol Oxidase (in the raw Olive Oil), Ascorbic Acid Oxidase & Pectinase (in the raw lemon juice).

*This is why we always add our olive oil and lemon juice after our food has cooled down, ready to be consumed.

 

Time to jump to our easy recipe.

 

After soaking our lentils for 24 hours (which is essential, see here why), we will put them in a pot with enough fresh, filtered water to cover them by a couple of centimetres.

Chop a large onion, as finely as you like.

Crash 3-4 cloves of garlic with the side of our knife, and then we chop them. This will activate the allicin, which is extremely therapeutic for arthritis, diabetes & cardiovascular health, boosting immunity!

Peel 2-3 carrots, and dice them into small pieces (about 0,5cm)

The herbs we are going to use: 2 bay leafs, ½ teaspoon whole black pepper, 2 teaspoons sage, ½ teaspoons thyme, 2 teaspoons ginger powder, 2 teaspoons turmeric, 2 teaspoons rosemary, ½ teaspoons cayenne pepper.

We will keep our sage, rosemary, thyme and bay leafs for the end, as we don’t want to ruin their healing properties by boiling them. We will treat them like a therapeutic tea. I ground them using a granite mortar & pestle, as I love natural elements :)

Add the rest of the herbs-spices to the pot, and continue with the carrots-onion-garlic.

Then add Himalayan salt to taste (Salt helps legumes soften by breaking down their pectin, which is responsible for bloating, digestion issues, and more). It will also provide numerous beneficial minerals. Alternatively, use unrefined sea salt.

Now put the lid on, bring to a boil, and reduce the heat to low. Let the food cook for 15-20’. Taste and when the ingredients have softened to your liking, remove the pot from the heat.

Now we will add the herbs that we kept for the ending, mix well, close the lid, and let them steep and cool down, for at least 10 minutes.

You will be amazed by the exotic aromas that will develop with this technique, and they will last.

Ready to serve :) After serving, add fresh lemon juice and raw virgin olive oil to taste once the food has cooled to a comfortable temperature for you to enjoy a lovely meal.

TIPS

  • A kind reminder to read why is extremely important to soak all of your seeds for 24 hours, even the tiniest ones :)


  • If you’re not an experienced cook, which is OK (!!!) you can try your food regularly while cooking it, and everything will be fine J Don’t let things like this prevent you from treating you & your beloved ones with a healthy meal. You’ll be an expert in no time if you try. Mistakes are also OK!!  Next time you’ll be perfect! :)


  • This recipe it’s absolutely safe for babies! You can easily blend the soup, after it’s cooled down a bit, for them, or for yourself, if you enjoy velouté soups. I have a lovely one here!, and one more here!


  • To add some vitamin D to your dish, at the end of cooking, you can add thin slices of raw button mushrooms that you first expose to sunlight for half an hour. This trick increases their vitamin D content, and they're delicious this way!! :)

  • Some think that the spices, such black pepper, ginger, cayenne pepper, etc. are irritating to the stomach. On the contrary, especially cayenne & ginger are used to heal & protect our stomach from even e-coli bacteria that cause ulcers. They’re also blood stimulants, protecting the cardiovascular system. Just control the amount you use, especially if you’ll be serving babies.


  • I always cook large quantities and freeze in serving-sized containers. It saves me time and energy. Go for it :) Just choose the containers carefully. I have a guide for you here.
